Cowboy Caviar Nachos

Cowboy Caviar can be purchased pre-made at the grocery store, or you can make it by combining black beans, black-eyed peas, onions, seasonings, tomatoes, peppers, olives, corn and cilantro. Add some kick to it and let it sit so the flavors blend together.
Ingredients
Tortilla chips
4-5 tablespoons of salsa
3-4 tablespoons of Cowboy Caviar
1/2 cup Sargento Artisan Cheddar and Sargento Artisan Mozzarella/Provolone
Directions
- On a 10″ microwave safe plate, spread the tortilla chips to cover the plate.
- Add the salsa over the chips.
- Spread the Cowboy Caviar over the salsa and chips.
- Sprinkle the cheese evenly over the chips and toppings.
- Cook on high for one minute, check it and then cook on high for an additional minute. If more time is needed to melt the cheese, do so in 30 second increments.
