Sauteed Zucchini with Basil & Cheese

1 Tbsp. olive oil
2 cloves garlic, thinly sliced
1 lb. zucchini, sliced 1/4-inch thick
1/2 tsp. salt
1/2 tsp. pepper
1 large tomato, diced
1/4 cup thinly sliced fresh basil
1 cup (4 oz.) Sargento® Artisan Blends™ Shredded Parmesan Cheese
Directions
- Heat oil in large skillet over medium; cook garlic 2 minutes, stirring frequently.
- Add zucchini, salt and pepper; cook 5 minutes or until zucchini is crisp-tender, stirring frequently.
- Stir in tomato and basil.
- Divide among 4 serving plates; top with cheese. Serve warm.
